Ethereo Albariño – Rias Baixas, Spain
Autumn is far and away my favorite time of year. I love the way the air feels, the smell of the trees transitioning for winter, the slight chill, the hearty foods making their way to tables. To complement these ethereal sensations, I paired the final week of September with a bottle of Ethereo Albariño.
Ethereo is a gorgeous white wine from Rias Baixas, Spain, rich with notes of honey crisp apple, Meyer lemon, and a minerality as crisp as an autumn breeze. This wine beautifully complements hearty foods like stuffed pumpkin, or lighter fare such as an arugula salad with walnuts, apple, and blue cheese.
Personally, I paired it with one of my favorite dishes: monkfish wrapped in serrano ham and served in a romesco sauce. The Albariño’s medium weight and citrus tones married beautifully with the fish and ham, while the bracing acidity cut through the modest spice of the romesco sauce to create a symphonic complement.
